From our burrow in Bons-en-Chablais, we've been dreaming up recipes for 100% herbal infusions with no added flavors for a long time. And then from time to time, we get behind the stove to revisit the great pastry classics with a Marmotte twist. That's what we did with our Candlemas crepes...
To make our delicious tea pancakes , you will need:
- 1 bag of Thé Réveille black tea
- 25cl of water
- 1 untreated orange
- 250 grams of flour
- 30 grams of powdered sugar
- ½ teaspoon of salt
- 3 eggs
- 2 tablespoons of powdered sugar (just to sprinkle on your pancakes)
- a little butter to put in the pan
Wake Up TeaBrew a Thé Réveillé Les 2 Marmottes (3 min at 100°C) and set aside 25 cl in a cup. Be careful not to let it brew for too long, otherwise the tea will be too tannic.
Squeeze the orange and reserve its juice.
Mix the flour, sugar, and salt.
Make a well, and add the eggs, then the tea and the orange juice.
Mix everything together. If there are any lumps, get out the blender!
That's it, it's almost ready! Let it rest for at least half an hour.
Heat the pan, add a small knob of butter, and off you go. In just a few seconds, you'll be able to enjoy our pancakes without hesitation!
For Candlemas, our 2 Marmottes put on their sommelier aprons and present their best pancake – tea or infusion pairings.
To accompany our tea pancakes, you can play the card of common flavors by choosing, for example, a Black Tea or a Citrus infusion . We are told in the earpiece that this is the least risky pairing but that it is worth a try.
Rest assured, if you are an adventurer at heart, nothing will stop you from trying a big leap with perhaps a Duo de Menthes or Cocktail Digest infusion.
