That's good, our marmots can't either! In our mini-series of gourmet tea latte recipes, it's this little dried fruit with a pretty green color that we've chosen to please everyone: you'll definitely get into the flavor, right?

Pistachio revolution!
An icon of indulgence, we find it in the most coveted chocolate bars in Dubai, we spread it at breakfast in its creamy and sweet version, we bite into it in melting cookies... In short, the pistachio is everywhere, all the time - to the point of becoming almost as rare as a groundhog in January.
Available as a milk drink, the pistachio is sought after and arouses passions: available in a limited edition "coffee" version in a famous takeaway coffee chain well known in the United States, it returns to the menu year after year, but never stays for very long!
At Les 2 Marmottes, we decided to invite it into our burrow for a little beauty treatment worthy of the name, but... No question of falling into sugar addiction, we preferred a clean and natural version: unsweetened pistachio paste, a little honey (or maple syrup), and that's it. Simple, but effective.
Pistachio green, where are you hiding?
If you've ever tried to recreate a homemade Pistachio Latte and were surprised you didn't get that pretty pastel green worthy of Instagram coffee shops... that's normal. And a good sign, actually.
The real pistachio—the kind found in natural, uncolored paste—has a more beige than neon green hue. When simply blended or pureed, it retains its sandy, or even brownish-green, hues, depending on the variety and roasting.
The result: a latte with an authentic taste, but with a much more understated color than what we see on social media. This famous "pistachio green" most often comes from food coloring. Or worse: "pistachio flavor" preparations that contain very few real pistachios, but lots of artificial flavorings!
So, how do you choose your pistachio paste?
We check:
- The ingredient list: a good pistachio paste contains... pistachios. That's it (or almost). Those loaded with sugar, flavorings, or unclean vegetable oils should definitely be avoided.
- The color: not too green, that's a good sign! We've said it before: a real pistachio is more of a sand color, not a fluorescent green. If the paste is radioactive green, there's probably a coloring agent hiding inside.
- Origin and variety: Some pistachios are more aromatic than others. For an intense flavor, you can aim for varieties like the Brontë pistachio from Sicily, for example.
Come on, now that you know everything about pistachios, will you roll up your legs for the recipe? No question of leaving the Pistachio Latte exclusively to coffee aficionados, the Marmots' Pistachio Latte is made with black tea.


Ingredients Pistachio Latte Tea (Pistachio Milk Tea)
- 2 bags of black tea “Thé Réveille” Les 2 Marmottes
- 25 cl of whole or vegetable milk (oat or almond for a sweet touch)
- 1 tbsp unsweetened pistachio paste
- 1 tsp honey or maple syrup
- 1 pinch of fleur de sel
- Whipped cream or milk foam (optional)
- Pistachio chips for topping

Preparation of Pistachio Latte
- Infuse the Thé Réveillé black tea bags in 10 cl of hot water for 3 to 4 minutes.
- At the same time, heat the milk with the pistachio paste, honey and fleur de sel, stirring until the mixture is smooth.
- Pour the tea into a large mug and add the hot pistachio milk.
- Finish with a nice milk froth (or a touch of whipped cream) and sprinkle with pistachio pieces.
The little extra tip
If you have the time (and the desire), toast your pistachio pieces in a pan for a few seconds to reveal all their aroma.
