The incredible recipe for tea crepes!

We've been dreaming up recipes for 100% herbal teas with no added flavourings for ages - all from our burrow in Bons-en-Chablais. And then, from time to time, we put on our aprons and give some great classics a Les 2 Marmottes twist. That's what we did with traditional French pancakes,aka crepes...

Organic black tea is great for crepes

Have you heard about crepes? This dish is traditionnaly from Britanny, but has taken over the country, and we sure love them in the Alps too.

Crepes are the French take on pancakes! Larger and thinner than the English pancakes, crepes are usually enjoyed at breakfast or on the traditionnal Chandeleur Day on Feb. the 2d. Since this is also Groundhog Day, the marmots had to mix the 2 events, and came up with their own crepes par-tea...

Ingredients

To create delicious Tea Crepes, you'll need:

- 1 bag of organic black Wake Up Tea or breakfast tea

- 25cL water

- 1 unwaxed orange

- 250 grams of flour

- 30 grams caster sugar

- ½ teaspoon salt

- 3 eggs

- 2 extra tablespoons caster sugar (just to sprinkle over your pancakes)

- a little butter to put in the pan

How to make tea crepes

Brew a Les 2 Marmottes Wake up Tea (3 min at 80°C) and leave in a 25 cl in a cup. Be careful not to leave to steep for too long, otherwise the tea will be too bitter.

Squeeze the orange so you have the juice.

Mix the flour, sugar and salt.

Make a well in the flour mixture and add the eggs, then the tea and orange juice.

Mix everything together. If there are any lumps, get out the blender!

It's almost ready! Leave to rest for at least ½ hour.

Heat the pan, add a little butter and off you go. In just a few seconds, you'll be able to tuck into our tas-tea French pancakes.

What hot drink tastes great with our tea pancakes?

For Pancake Day, our 2 Marmottes are donning their sommelier's aprons to bring you their best pancake - tea and herbal tea pairings.

To accompany our tea pancakes, you can could try teas with a similar flavour palette, for example, a Black Tea or a Citrus Herbal Tea. A little bird told us this is a safe bet, so go for it!

If you're more of an adventurer at, there's nothing to stop you being bold. Why not try a Duo of Mints or Digestive Cocktail herbal tea?

Lastly, if you're a real foodie, opt for a delicious Strong Spicy Tea, to keep the tastiness going.
