Among tea lovers, there are purists who swear by the traditional method: water at exactly the right temperature, period. And those who can't live without a splash of milk.
Rest assured, at Les 2 Marmottes we don't judge anyone! What matters, of course, is having fun, whether or not you take the Milky Way.
To make a good latte, it is important to choose a tea with character, capable of competing with milk, particularly if it is flavored (with spices, flowers, etc.).
With its intense bergamot aroma, Earl Grey tea is just the thing! In its milky version, it bears the sweet name "London Fog," a nod to the British capital's famous fog.
As is often the case, the origins of London Fog are not entirely clear! Without a pun, one could even say that its history is a bit obscure. The origins of Earl Grey tea were already the stuff of legend...
Against all odds, Earl Grey "London Fog" was born in the 90s in Vancouver (Canada), far from Great Britain, where a charming pregnant woman pushed open the door of a café with one fixed idea: to be served an Earl Grey with hot milk and vanilla. We don't really know more!
On the other hand, when it comes to the recipe, everyone agrees that a London Fog is made with Earl Grey tea, milk, sugar (or honey), and a little vanilla. Phew, we're saved!
To make 2 cups of London Fog in the style of the 2 Marmottes, you will need:
- 300 ml of water
- 3 organic Earl Grey tea bags
- 320 ml of milk (or vegetable milk)
- 1 tablespoon brown sugar
- ½ vanilla pod
Step 1: First prepare the tea by heating the water to 100°C using a kettle or teapot for 3 minutes
Step 2: Heat the milk gently in a saucepan
Step 3: Add the sugar
Step 4: Scrape your pod with a knife and immerse it in the milk to let it infuse for 5 minutes.
Step 5: Froth the milk using a milk frother. Divide the tea into two equal cups and add vanilla milk to taste.
All that's left is for you to enjoy!
The advantage of Latte is that it can be varied almost endlessly depending on your current mood.
The first ingredient you can juggle with is milk: oat, almond, cashew... it will bring lovely vegetal or slightly toasted notes to your London Fog.
Still using milk, you can also play with the texture of your recipe: for a creamier tea, opt for 30% water and 70% milk. And if you reverse the proportions, you will get a lighter tea.
As for flavors, don't hesitate to think outside the box with fresh lavender flowers sifted directly into the milk, a drop of syrup or rose water, a pinch of cinnamon or nutmeg, orange blossom honey instead of sugar...
Anything is possible when it comes to breaking the "English fog" of torpor!
