Our priority is above all the taste of our infusions .
So we use the most fragrant part of this spice, namely the bud.
This flower loses its fragrance as it blooms over time, which is why our producers pick it just before blooming to maintain the taste quality in our recipes.
The tropical climate has seduced these flower buds which, after several days drying in the sun, take on a beautiful reddish color.
It is by removing their stem that they become this much-loved spice: Clove .
