Alain, known as "Loulou," fell in love with mint when he was little. During the peppermint harvest, at 5 a.m., he agreed to answer our master infusers' questions. And he's not here to joke around.
What are the benefits of peppermint? Why is it so powerful in our infusions?
This is thanks to its exceptional concentration of menthol. Mint contains both menthone and menthol. It is the menthol that provides the freshness. Milly-la-Forêt mint is an even more aromatic variety than regular peppermints. Even I, who am used to it, find it stings my eyes when I dry mint!
A 5 a.m. appointment also stings the eyes. Why harvest mint so early in the morning?
Because it must be harvested when it's cool, still dewy. This ensures its optimal preservation until drying.
When is mint harvested?
Peppermint cultivation follows very precise specifications. For example, mint should not be watered for 15 days before cutting. The first cutting takes place in the first week of June, the second in July.
Once cut, where does the mint go?
It's important to work quickly to avoid damaging the leaf. The mint is cut immediately. The mint is then passed through a hot air dryer and then stored in another dryer equipped with a chestnut floor. After drying, it is put into boxes before being shipped to Haute-Savoie directly to Les 2 Marmottes where it will be prepared to be transformed into herbal tea !
