What are the benefits of chamomile in infusions?
Used for centuries for its medicinal properties, chamomile is renowned for its gentleness and its relaxing and digestive properties .
The ancients attributed many virtues to it, notably anti-spasmodic and an ability to calm sleepers.
Today, chamomile is recommended in the evening because it helps maintain good sleep . 3 cups a day provide the relaxing effect. So relax and drink it hot!


What chamomile is used in Les 2 Marmottes infusions?
We distinguish Roman chamomile, a kind of very fragrant white pompom, from German chamomile , recognizable by its flower heads. It is the latter that our master infusers use to make our infusions. This pretty, very soft shoot is harvested 200km from our burrow, in Isère .
It is from November that Aurélien, our Isère producer , sows the small seeds which will become a few months later pretty little white and yellow flowers . Once harvested, it is the tops - the head of the flower including the petals - that our master infusers will come to work.


In which recipes do our master infusers use chamomile?
Chamomile is used in our bedtime drink recipes like Night Fairy and 1,2,3 SLEEP .
Its subtle taste blends well with other flowers such as orange, lime or with fresher notes such as lemon.
Purists looking for highly floral flavors will opt for our German Chamomile : a great classic infusion, 100% chamomile with no added flavors, which once immersed in hot water will guarantee a peaceful night. 5 minutes at 100°C: this is what removes all bitterness and unfolds its slightly honeyed taste.

"At Les 2 Marmottes, there are no middlemen; we know our producers inside and out! Chamomile is the ideal plant for our soothing infusions. At Les 2 Marmottes, we receive it whole, our goal being to reduce the size of the stem as much as possible, because it's the tops—the head of the flower including the petals—that interest us the most. To guarantee the best quality, we decided to work directly with a small producer who has started producing MAPs (Aromatic and Medicinal Plants) in Isère, to whom we supplied Egyptian seeds that met our specifications. We've been working hand in hand for several years to cultivate plots dedicated to our infusions. Together, we've learned how to grow and harvest German chamomile that's very specific to our expectations, both in terms of flavor (haaa that little taste of honey) and benefits, ideal for our evening infusion recipes."
