Fennel and Les 2 Marmottes have a long history. Our master infusers have a soft spot for its seeds and their subtle aniseed flavor, which bring freshness in summer when brewed cold, and comfort in winter when brewed hot.
Inside every flower, there is a seed. A group of flowers forms an umbel, similar to a yellow umbrella. Umbel, umbrella, umbrella (ha…ha….hey….hey..), to protect its seeds from the sun necessary for flowering but which must not burn them either. A subtle balance that we manage to achieve with our own plots.

"To obtain the best seeds, we have been working directly with the same producer for over 35 years. We cultivate our own plots in the Vaucluse region, on sun-drenched land, where we visit twice a year, at flowering and harvest times. In total, nearly 20 hectares are allocated to Les 2 Marmottes, and after each harvest we keep around 150 kg of seeds that will be used to replant the following year. What we have managed to achieve, year after year, is an aniseed and fresh taste, but not too strong. Some people who don't like fennel appreciate our infusions because of their very subtle aroma. The time of harvest is very important because if the seed "burns," the taste can be astringent, less pleasant in the mouth. Frankly, our fennel is the best, in hot or cold infusion. Period."
