Lemon balm is a perennial herb belonging to the Lamiaceae family. This attractive plant, native to the northeastern part of the Mediterranean basin, was introduced to the West during the Middle Ages.

What are the benefits of lemon balm in infusions?

Lemon balm is a perennial herb belonging to the Lamiaceae family. This pretty plant, native to the northeastern part of the Mediterranean basin, was introduced to the West during the Middle Ages. It is now very common in Europe, where it can grow spontaneously in woods or hedges, for example. Some even grow it in their gardens!

Composed of branched stems and green embossed leaves, this plant can reach a maximum height of 80cm. Rich in phenolic acids and flavonoids, lemon balm is known for its calming and sedative properties , but also for aiding digestion . Its lemony scent makes it delicious as an infusion .

What lemon balm is used in Les 2 Marmottes infusions?

Our lemon balm is harvested in the Drôme by our farming partner Frédéric .

It can be harvested up to 3 times each year, preferably in the morning, when the dew has dissipated and before the afternoon heat sets in.

The plants are then dried between 40 and 45 degrees to preserve all their active ingredients and then stored in a dry place away from light to prevent them from becoming waterlogged and losing their vitality.

Once the lemon balm leaves have arrived in the burrow, it's up to our master infusers to find companions for this plant to create original, offbeat recipes with a unique taste.
