What kind of vanilla is used by Les 2 Marmottes?

Vanilla is a spice that comes from the only edible fruit in orchid family, the largest family of flowering plants in the world! 

Originally from Mexico, where it is still pollinated in the wild by a small endemic bee, it has since been widely exported. Elsewhere, there are almost a hundred different varieties, with subtle differences depending on where they grow! 

The ones we savour most often are Bourbon Vanilla (planifolia), Pompona Vanilla, with its aromatic balsamic and woody notes, and Tahitensis Vanilla, with its fruitier, more floral notes, originally from Tahiti.

At Les 2 Marmottes, we use genuine Bourbon Vanilla from Madagascar and we never ever, ever add any flavourings, we know you know, but it's worth repeating! So we finely chop these authentic pods before blending them into our organic vanilla tea: no vanilla flavourings (synthetic or natural), no vanilla extract....

What is a Bourbon Vanilla?

The name "Bourbon Vanilla" applies to vanilla (Vanilla planifolia) grown in the Indian Ocean and to the corresponding traditional preparation technique, as opposed to vanilla grown in Mexico, Tahiti or Indonesia.

It designates vanilla from Réunion Island (formerly known as Bourbon Island, hence the name), Madagascar, Mayotte, the Comoros and Mauritius. 

This vanilla is renowned for its intense fragrance and complex notes of dried fruit, rum and raisins.

In which recipes do our brewmasters use vanilla?

The only Les 2 Marmottes recipe that uses vanilla is, of course, our Vanilla Tea: savour every sip right down to the last pod and escape for a moment with a warming organic tea with no added flavourings. 

Its signature touch: a hint of rooibos and a dash of stevia leaf (not to be confused with the sweetener) are added to the tea to enhance the vanilla and counterbalance the firmness of the black tea, offering a rounded, verdant taste on the palette.

It's so fragrant that you can even use it in cooking to make great desserts, such as delicious little homemade vanilla custard puddings.

François, our crop expert, loves vanilla :

"Vanilla is a really beautiful product!

When the Spaniards tried to grow this great orchid outside of Mexico, the result was a bitter failure: no fruit to harvest... The melipona bee, found only in Mexico, is the only bee capable of pollinating vanilla!

From then on, vanilla was pollinated by hand anywhere else in the world. This makes it one of the most difficult spices to grow! 

Our vanilla is prepared by hand using the Bourbon method, which means that it goes through a whole process that can last from 6 to 9 months: scalding, steaming, drying in the sun, drying in the shade, maturing...

The grower's experience is essential, because you have to adapt to the size and quality of the pod. A totally traditional method that gives Bourbon Vanilla its distinctive flavour."
