The same plant growing in different locations can secrete very different essences depending on the sunlight, climate, soil composition, or altitude. The concept of chemotype, made official in the European Union in 2006, designates a distinct chemical entity within the same species. Why tell all this? Not to be clever, but because it is the basis of our Thyme infusion recipe. The three thymes selected are all "thymus vulgaris," but different sub-varieties used for a very specific purpose.
